Last week I found myself with a case of cucumbers and no plan of action. Well, almost no plan of action. Last summer I was in a similar position but with summer squash. My solution was to peel and dehydrate small slices to make delicious chips. Applying the same simple logic to my mountain of cucumbers yielded an even better tasting result. Sprinkle the slices with a bit of saltand garlic powder, and you'll have a hard time stopping at just a handful. Raw, low carb, and crunchy, these cucumber chips are fun snack to munch on any time.
Directions:
1. Peel cucumbers
2. Slice cucumbers thinly
3. Arrange slices on dehydrator sheets and sprinkle with salt, garlic powder, or just leave plain.
4. Dehydrate at 115F for 12-15 hours or until crispy (I have this dehydrator).
